Cabbage Salad Recipe for Brides on the Go from A Happy Healthy Heart

Hey girl! I am so excited to share this guest post with you today from food blogger Melissa Haithcock with A Happy Healthy Heart! Melissa was kind enough to share her cabbage salad recipe with us since it's the perfect healthy lunch for the on-the-go bride! Hopping from appointment to appointment on your lunch break and after work gets hectic - and finding time to eat healthy in hopes to look your best on your wedding day isn't always the easiest! But this cabbage salad recipe is one that will put these worries to rest. The delicious + fresh ingredients are sure to give your tastebuds a treat! Without further ado, I'll let Melissa share her story + recipe with y'all!

Melissa from A Happy Healthy Heart: I haven’t always loved vegetables and when I first started experimenting with recipes that included them I had to make myself want to eat them. For me, this meant they had to be pretty! Our eyes are drawn to attractive things so I figured that if the food looked good then it must taste good too! I have now learned that the prettier the food, the better it is for you because the color comes from the nutrients within it. 

 

On Sundays, my mom would steam cabbage before church so that it would be ready for lunch later that afternoon. I remember waking up to the smell of it and thinking it was awful! The scent would drift into my room just as I was opening my eyes and because I didn’t like the way it smelled, I never ate it. I didn’t eat cabbage until a couple of years ago but now I absolutely love it; especially red cabbage.

 

I love combining all kinds of fresh vegetables into one bowl to make a complete meal. This dish is just that. The quinoa offers protein, the vegetables are full of nutrients and the peanut butter sauce is a source of good fat. If you like, you can always substitute almond butter in the sauce. It’s just a matter of preference.

Ingredients

¼ head red cabbage, thinly sliced

¼ head green cabbage, thinly sliced

1 head broccoli, chopped

5 mini bell peppers, sliced

½ sweet onion, minced

2 carrots, peeled and shredded

1 ¼ cup quinoa

¼ cup vegetable broth

handful of cilantro 

Sauce

2 tbsp peanut butter

2 tbsp tamari (or sub liquid aminos)

1 tsp chili flakes

1 tbsp olive oil

salt and pepper to taste

Directions

Once all vegetables are chopped, combine all sauce ingredients in a small bowl, mix until well incorporated and set aside. 

Cook quinoa according to package instructions.

In a large saucepan heated to medium heat, cook vegetable broth, onions, broccoli and peppers together. The vegetable broth should simmer and absorb into the vegetables. Allow to cook for 7-8 minutes.

In a large bowl combine quinoa, cabbage, carrots, cooked vegetables, and sauce. Mix well and until sauce has covered all ingredients. Add salt and pepper to taste.

Serve warm or cold. Store in air tight container for up to a week.

They've got the budget and plan to buy it anyway... now they know lives are being changed while they have fun on their BIG day.

What trends are you seeing in the wedding beverage space?

Danielle: We are constantly rolling out and changing varietals. Every single bottle gives back. Our GLITTERS are pretty special. I think the coolest thing we can do is that the bride and groom can choose their OWN cause of choice from their purchase. 15% can go to a charity that THEY choose. That makes it even more special and meaningful. Love pets? We can give a donation to YOUR local pet shelter for example. Any 501c3 can receive a check!

Is there anything else you'd like to share about ONEHOPE?

We spoke with Karen from Two Fat Men all about their business, so read below and learn more about their take on wedding food!

Tell us about Two Fat Men Catering + how long you've been in business!

Karen: Our owner, Ed Riley has always had a passion for cooking. Raised on a farm in Byrdstown, Tennessee; Ed grew up working the farm and truly lived the term “Farm to Table”. He loved spending time in the kitchen with his mom and grandmother; many of their recipes are still used in our kitchen today. Ed is a self taught Chef; he sleeps, eats, and dreams of new and creative food ideas 24/7. He likes to put a "fat man” spin on southern favorites that he grew up with like our yummy meatloaf and mac & cheese. Our business began over 14 years ago when Chef Ed would meet with his friends on Thursday nights and cook dinner for everyone, featuring a new recipe each week. When the niece of one of the Thursday night members was diagnosed with breast cancer, the group decided to do a fundraiser. Ed catered the food and that is how our Low Country Boil began! We just celebrated our 14th year and raised over $50,000 for Sherry Run.

How did you get started in weddings?

Karen: Word of mouth began circulating around Wilson County about our Low County Boil event and people just started calling wanting to hire us for weddings. And now we caterer over 100 + weddings a year!

What's the philosophy behind Two Fat Men?

Karen: We treat our clients like they are company at our home. We want our guests to leave each event talking about what a great time they had enjoying our food; all with a Two Fat Men touch that makes our food unique and special. We’re proud of our culinary diversity as we take a hands-on approach to all our meals and delight in mixing good old fashioned favorites with new, modern innovative techniques and ideas.

What are your strengths compared to other caterers?

Karen: Our culinary team first considers each new dish with the question, “What brings about the best flavor, texture and appearance?” Our culinary experts then meticulously refine each recipe. Over time, our menu offerings evolve to suit changing tastes and dining trends. Our dedication to research is why there’s always something fresh on the table at Two Fat Men. We are picky. The best ingredient is one that is hand-selected for freshness and flavor. To make each recipe stand out, we source the finest ingredients from an extensive network of specialty growers and suppliers. We work directly with farmers, and have total confidence that our food is perfectly grown and perfectly fresh. We don't just come into someone's home or venue and put our food out in chafing dishes - we go the extra mile. We blend our food displays to blend with our brides wedding décor. If our bride is decorating with a Great Gatsby theme, our team will display our food using crystal decanters, golden 3-tier stands, mirrors and incorporate white feathers in glass cylinder vases as a focal point. Guests first eat with their eyes so the food display has to be eye appealing. Front of the house catering managers, Debbie Valentine & I, meet with each couple to find out exactly what vision they have for their wedding day and we make it happen. We ask for each couple to schedule a private tasting to ensure we have the perfect menu picked out for their day.

What attracts brides to Two Fat Men Catering?

Karen: Word of mouth is our best advertisement. 90% of our weddings are from a referral. We love it when a father calls and tells us his baby girl is getting married and it won't be a wedding if we don't have the "Fat Man" team there since we catered his 2 older daughters' weddings.

What is the most innovative new trend in wedding catering?

Karen: Ed continues to live and learn about food with constantly reading cookbooks, attending culinary classes and his latest accomplishment, graduating from Penn State Culinary Ice Cream School. He refers to himself as an “artist” with food as his canvas; his passion comes from his soul. Ed is passionate, artistic, caring and humbled that our guests would let us cater their very special event. This has lead to our newest business venture our Two Fat Men Ice Cream Truck. Our brides and grooms love having our ice cream truck at their weddings featuring their very own signature ice cream. Our couples come to the kitchen and spend an afternoon making their own ice cream to serve at their wedding. Not all couples want to dive into the kitchen to make their ice cream, we have many flavors for them to select from. Our best sellers are Madagascar vanilla and salted caramel.

Tell us about Taziki's + how long you've been in business!

Olivia: Taziki's started out in Birmingham, AL almost 20 years ago. We brought Taziki's to Nashville almost 6 year ago beginning with our Cool Springs location and expanding since. We know that we have something unique to offer from affordable craveable food to spectacular customer service; and a mission that will warm anyone's heart. Brides will fall in love with us once they step foot inside our doors.

How did you get started in weddings?

Olivia: Well, we got started in the wedding industry, naturally. We had couple who were avid Taziki's lovers and just wanted it. We knew that our price point was going to draw a lot of brides with a budget our way. And since then, it's been history!

What's the philosophy behind Taziki's?

Olivia: We believe in giving back. From the time Keith and Amy started Tazikis's, they started investing in the lives of others - their staff, their customers, and their future customers. We know that we have been so blessed monetarily as well as personally to get involved in wonderful community and we can't keep it all to ourselves. We share. It is our mission to employee adults who aren't always given opportunities, invest in the youth through schools, and just go where there is a need.

What are your strengths compared to other caterers?

Olivia: Ya know, we aren't just caterers. We are there to lend a helping hand the day of the wedding. As far as the restaurant side of things is concerned, we can offer catering and bartending services which is a relief to most brides. Our menu is also very allergy friendly. We can accommodate a variety of diets including gluten free, vegetarian, dairy free, etc.

What attracts brides to Taziki's Catering?

Olivia: Our bride is a bride that is looking for a well-balanced meal that is semi-formal with fresh and light food at an affordable to moderate price point. Most of our brides can get the full package by the time they leave Taziki's. I would say our bride also wants a caterer who will walk hand in hand with them. We are always there to give vendor recommendations, help with site visits, and in turn, they will have a detailed action plan on the day of their wedding.

Engagement season is here! And welcome to all of you newly engaged couples who may be reading this as we speak (er... type!). The questions from family and friends never seem to cease from the moment the ring gets on your finger, but don't sweat it. Take your time and celebrate every moment and don't feel any pressure to have all the answers. Our friends over at Chef's Market provided some insight for us: 3 tips on how to start your wedding planning process! This step by step guide will help you ease into the planning process. The most wonderful time of the year has just passed, engagement season! According to Weddingwire, 33% of all engagements happen between Thanksgiving and New Year’s Day. If you were one of the lucky ones to get engaged in the last few months, you might be asking yourself: What now?

Here are a few tips from our catering experts of what to do now to start the wedding planning process:

1) Celebrate your engagement! 

Don’t rush into any planning for a few weeks and take time to enjoy your fiancé and this special time in your life. If you haven’t already, show off your ring to all your friends and family. Perhaps have an engagement party! Last but not least, pop a bottle of champagne and soak in every minute!

2) Create your vision.

Find out what your style is. Are you wanting an intimate, casual, or more formal wedding? Once you figure out what direction you want to take then use tools like Pinterest, social media platforms like Instagram, wedding websites and magazines to help get visual ideas. Every year the wedding trends change so these tools will help you with knowing what is in and what is not.

3) Hire your vendors.

It is important to hire vendors that fit your vision. Make sure you research their past work to get an idea of what to expect. We recommend considering a wedding planner as they will be able to better direct you in this planning process. However, here at Chef’s Market we are able to help too.
